On April 8, 1991, Joe Grabowski embarked on what would become an extraordinary 34-year journey with Charcoal Pit. Starting as a part-time takeout worker earning just $5 an hour, Joe quickly distinguished himself through his exceptional work ethic, warmth, and dedication to both his team and guests.
“I started on takeout—taking orders, making milkshakes, wrapping food, keeping everything spotless,” Joe recalls. “If you didn’t wipe something down, a manager would remind you—because the customers were always watching.”
Throughout his remarkable tenure, Joe mastered every role – from making milkshakes and burgers to mentoring countless teammates and serving generations of loyal guests. His journey ultimately culminated as the Front of House Night Manager, a position reflecting his leadership, reliability, and deep commitment to the Charcoal Pit family. Yet, for Joe, the people were always what made it special, turning the restaurant into a second home.
“The people who work here—we were like family,” he says. “Managers never bothered you as long as you did your job. We supported each other, and it made coming to work more than just a shift.”
Joe’s dedication was extraordinary. When he considered taking additional hours elsewhere, his manager recognized his value, promising, “Joe, if you stay here, I’ll give you all the hours you want.” True to his word, Joe stayed—working six days a week and often overtime, becoming a cornerstone of Charcoal Pit’s success and culture.
Over the decades, Joe watched Charcoal Pit evolve through menu changes, new concepts, and shifting trends. Yet, what never changed was the restaurant’s unique atmosphere of community and connection.
“A lot of guests come in just to talk,” he shares. “Some don’t get that connection at home—that’s what makes this place special.”
When asked about his favorite menu item, Joe smiles fondly: “The Onion Lover grilled cheese. Tomato, onion, butter—grilled just right. It was the best thing ever. I don’t even think it’s on the menu anymore, but it should be.”
Now, as he prepares to enter retirement, Joe looks forward to spending precious time with his wife, organizing his home, and reflecting on decades of cherished memories.
“It’s been such a great chapter of my life” he says thoughtfully. “You meet wonderful people. Some need encouragement, some are going through tough times, but everyone leaves an impact. It’s been very rewarding.”
He credits much of the positive experience to supportive leadership, specifically recalling owner Louis Capano Jr’s reassuring presence: “Mr. Capano was always the one who said, ‘Don’t worry Joe, it’ll be okay.’” That calming, reassuring spirit defined the culture at Charcoal Pit.
Joe offers this timeless advice to future team members:
“Keep a positive attitude, greet every customer warmly, and always be neat and presentable—remember, you represent the Charcoal Pit and its legacy.”
